    1. Tomato Basil Soup

    Blend chicken, vegetable broth, chopped tomatoes, tomato paste, rolled and sliced basil, crushed and minced garlic, chopped onion, garlic powder, dried oregano, marjoram and salt to taste in a blender.

    Now boil this mixture in a saucepan and then simmer for 20 to 30 minutes.

    Serve hot.

     

    2. French Onion Soup

    Brown the onions in lemon juice and water.

    Combine with spices and beef broth.

    Allow it to simmer for 20- 30 minutes.

    Garnish with Melba Crust Croutons.


    The HCG Menu

    HCG Breakfast Recipe:

    Tea, coffee, or water. 1 Tbsp. limit of milk each 24 hours. (Stevia may be used.) Drink plenty of water with meals.

    HCG Lunch Recipe:

    1. 100 grams (4 oz.) of veal, beef, chicken breast, fresh white fish, lobster, crab or shrimp. Remove all visible fat and weigh meat raw before cooking, broiling or grilling. Avoid: salmon, eel, tuna, herring, dried or pickled fish because of fat and oil content
    2. One vegetable: 2 cups of spinach, chard, chicory, beet greens, tomatoes, celery, fennel, onions, red radishes, cucumbers, asparagus, cabbage; 1 cup of tomatoes or onions
    3. One Grissini breadstick or one Melba toast
    4. An apple,, or a handful of strawberries (7-10 med.), or one-half grapefruit. 

    HCG Dinner Recipe:

    Consume the same four food categories eaten for lunch; drink plenty of water. Other items for consumption: 1 lemon, salt, pepper, vinegar, mustard powder, garlic, sweet basil, parsley, thyme, marjoram for seasoning, but avoid oil, butter or dressing. Fruit or a breadstick may be eaten between meals.

    Crockpot Chicken or Beef

    You can cook several pounds of chicken/beef ahead and freeze for convenience.
    2 pounds chicken breast/lean beef 1 tsp. salt; 1 tsp. garlic powder; 1 tsp. pepper; 1 tsp. onion powder; Water; 1 tsp. paprika. Place all ingredients in a crockpot and add enough water to cover. Cook for 8-9 hours on low until chicken/beef is very tender. Remove meat from crockpot and shred. Divide into 8 individual servings and place in small containers. Add 1-2 Tbsp. broth to each serving to keep moist. Seal and freeze. Hint: chill beef broth and skim off fat before using. Save remainder of broth for use in other recipes. 8 servings

    Pressure Cooked Chicken or Beef

    2 pounds chicken breast or lean beef; 1 tsp. salt; 1 tsp. garlic powder; 1 tsp. pepper; 1 tsp. onion powder; ½-¾ C. water; 1 tsp. paprika. Directions: You can cook several pounds of beef/chicken ahead in a pressure cooker. Remove visible fat from beef or use chicken breasts. Add all the ingredients and pressure chicken for 30 minutes and beef 50-60 minutes. Remove the meat and shred upon completion. Divide into 8 individual servings and place in small containers. Add 1-2 Tbsp. of the broth to each serving to keep it moist. Freeze extras. Hint: Chill beef broth and skim off fat before using. Save the additional broth for other recipes. 8 servings

    Chili

    2 pounds lean ground beef or ground chicken breast; 1 tsp. garlic powder; 2 cans diced tomatoes; ½ tsp. cumin; 1 C. water; 2 tsp. chili powder; 1 tsp. onion powder; Salt and pepper to taste. Cook ground meat until done. Remove meat from frying pan into a colander and rinse under hot water to remove all fat. Return to pan and add the remaining ingredients. Simmer for 20-30 minutes. Divide into 8 portions and package. Serve with Melba toast and additional fresh tomato wedges to complete your vegetable. Freeze unused packages for quick meals later. 8 servings

    French Onion Soup

    1 ½ C. beef broth; ½ -1 onion, cut in thin strips; ½ C. water; 1 clove garlic, minced; ½ tsp. Worcestershire sauce; Salt and pepper to taste; 1 Tbsp. lemon  juice Brown onions and garlic in a little water and lemon juice. Add remaining ingredients and simmer for 20 minutes. You can also add your beef to the soup to make it heartier. 1 serving. 

    Chicken Soup 
    4 oz. chicken breast, diced; 3 stalks celery with tops, sliced; 1 can chicken broth; ½ tsp. onion powder; ½ C. water; 1 tsp. Bragg Liquid Aminos Add all ingredients into a medium saucepan and simmer until chicken is cooked, about 15-20 minutes. Remove from heat and serve. 1 serving

    Chicken Tomato Soup

    8 oz. chicken breast, cooked and shredded; ½ tsp. onion powder; 1 15 oz. can diced tomatoes; ½ tsp. garlic powder; 1 C. chicken broth; 1-2 tsp. fresh celery tops, chopped; 1 C. water. Add all ingredients to a medium saucepan, bring to a boil, reduce heat and simmer 20 minutes. Suggestion: for a Mexican flavor add ¼ tsp. each of cumin and chili powder and garnish with 1 Tbsp. fresh cilantro, chopped. 2 servings

    Cabbage and Chicken Soup

    12 oz. chicken breasts, cooked and shredded; 2 tsp. lemon juice; 2 cans chicken broth; 2-3 tsp. Bragg Liquid Aminos; 1 C. water; 1 tsp. garlic powder; 1 Tbsp. celery heart leaves, chopped; 1 tsp. onion powder; 1 med. head cabbage, rough chop; 1 Tbsp. fresh cilantro, chopped. Directions: Add all the ingredients together, reserving cilantro, in a medium stock pan. Cook until the cabbage is wilted. Sprinkle with cilantro. Season to taste, and serve. 3 servings. Note: If using raw chicken, dice and cook it in the chicken broth with everything except the cabbage and cilantro. Once the chicken is cooked add the cabbage and cook until it wilts. Sprinkle with cilantro and serve.

    So Simple Shrimp

    4 oz. shrimp with tails on; Water; Cajun Seasoning, like Tony Chachere’s or Zatarain’s. In a medium-sized skillet add enough water to cover the bottom. Heat to medium high. Add either raw or frozen cooked shrimp. If raw, cook until opaque (3-5 min.), turning once. If cooked, cook until shrimp are heated through on a medium temperature. Sprinkle with Cajun Seasoning. 1 serving

    Cabbage and Apples

    2 C. cabbage, roughly chopped; 2 Tbsp. Bragg Liquid Aminos; 1 large red delicious apple, chopped; 1 tsp. garlic powder; ½ C. apple cider vinegar; 1 tsp. onion powder; ¼ c. water; Salt and pepper to taste. Sauté all ingredients in a skillet until cabbage and apples are tender. Serve hot. 1 Serving of fruit and vegetable

    Baked Apples

    4 large apples, cored; 2 Tbsp. water; 2-3 packets of Stevia; Pinch of cinnamon. Preheat oven to 375 degrees. Core the apples, being careful not to cut clear to the bottom, and pare a strip from the top of each. Place in an 8x8 inch baking dish. Dissolve the Stevia in the 2 Tbsp. of water. Divide into four portions and put ½ Tbsp. of sugar/water mixture into each apple. Sprinkle each with a pinch of cinnamon. Pour 1 C. of water around the apples and bake uncovered for 45-60 min. You may add additional drops of Vanilla Crème Stevia to the finished product. Serves 4

    Applesauce

    1 large red delicious apple, chopped; Dash of cinnamon, ¼ C. water; 1 packet of Stevia Place apples, water and cinnamon in a small saucepan. Cook until apples come to a boil. Add the Stevia and turn heat to a simmer. Cook covered until most of the water is gone, stirring every few minutes. Remove from heat, puree, adding additional water as needed. 1 serving

    Apple Compote

    Using the same ingredients as above, follow the directions and cook until the 
    apples are tender. Serve warm, pouring the thickened liquid over the top.

    Strawberry Vinaigrette Dressing

    2-3 strawberries hulled and quartered; add Stevia to taste; 1 Tbsp. apple cider vinegar; ¼ tsp. garlic powder; 1 Tbsp. lemon juice; dash of salt. Combine all ingredients in a food processor or blender until smooth. Use on salads and garnish with additional strawberries to complete your fruit serving.

    Dinner Salad

    2+ C. fresh spinach; 1 serving cooked chicken or beef, 6-8 strawberries, hulled and sliced. On a bed of fresh spinach leaves, add your allotted cooked beef or chicken and top with sliced strawberries. Serve with Strawberry Vinaigrette Dressing. 1 serving

    Strawberry Lemonade

    2-3 strawberries, mashed; 8 oz. water; Juice of ½ lemon; add Stevia to taste; Mix together and enjoy! 1 serving
